Tycer shakes up chefs at Textile, Gravitas

There are changes in the mix at Scott Tycer's much-lauded foodie haunt, Textile.

With the departure of executive sous chef Dax McAnear for San Francisco, Scott Tycer will be taking on a more supervisory role and bringing in the culinary prowess of Ryan Hildebrand as the new chef.

“I’m proud of Dax,” Tycer says. “He’s given me a year and a half of excellent effort. He’s making a big move for himself."

Tycer himself will be taking on a more active role at Gravitas, whose kitchen he has supervised since the much-publicized departure of Jason Gould last summer. In addition to taking over day-to-day operation, Tycer will focus on new features like the raw bar.

Hildebrand is a Houston native and a graduate of the Culinary Institute of America, having served in the kitchens of Mark's and Olivette,  most recently working as the opening chef de cuisine at The Rockwood Room. He takes over at Textile on Feb. 23.
